Ugeoji Sundae Soup (우거지 순대국) has ugeoji (Napa Cabbage) and jalapeno added to soondae soup for added texture and flavor. It has a little kick to it but not too spicy. Ugeoji is outer leaves or stems of napa cabbage, or other greens, which are removed while trimming the vegetables. Ugeoji is often added to other dishes including soondae soup, pork soup, or kalbitang, etc..
